The Apple & Flax Seed Muffins

Here at Chibi's Recipes I like to believe I am the new host of "Semi homemade", so bare with me because a lot of my stuff I do not make 100% from scratch (too lazy too).

Ingredients-
1 box of Fiber One: Apple & Cinnamon Muffins
2 brown eggs (white is ok but I like brown eggs better)
1/4 cup of unsweetened applesauce (I am skipping the oil due to unneeded fats)
2/3 cup soy milk
3 tablespoons milled flax seeds

Instructions-
Preheat the oven to 425, like box says, then combine the boxed muffin mix with the three tablespoons of flax seeds. Then add in the center the applesauce. Next in a separate bowl add the soy milk and the eggs together and beat thoroughly. Then you will want to add that to the mix and applesauce. Blend together well, making sure all the mix is no longer powdery (flour clumps suck!).

What I do next is that I just go ahead and add the mix right into my silicone cupcake/muffin holders, I skip using the paper lining because I try to be a little resourceful. I then bake them for about 19-25 minutes and they come out just delicious and moist. Its going on day three and their still moist and delicious.

Tips-
Because of the fiber count in these try to only have one at a time. The eggs and soy milk may give it protein counts but still be carb wary!

Also if you shop Wal-mart, try to skip the Great Value Soy Milk, I know here in SD currently Great Value costs the same as Silk's Heart and Brain healthy Soy milk at $2.98 a half gallon. Can you guess which one I buy? Plain Soy milk vs. Silks Heart and Brain Healthy? lol.

Brown vs. White Eggs; sorry folks I know most people claim that they "taste" the same. But that's just not true to me and I cannot eat egg beaters a lot. But I happen to love the more richer textures and flavors of a brown eggs yolk.
