Crab Stuffed Noodles (Homemade version)

Crab & Cream Cheese Stuffed Homemade Noodles!
(Sorry for lack of pictures!)


Dough Ingredients-
4 cups flour (any kind will do I promise), plus additional for rolling out
2 tbl spns Olive Oil (or whatever oil you have for baking)
1/4 of Water
1/2 cup sour cream
2 eggs
1 tbl spn oregano
1 tbl spn parsley
1/2 tbl spoon cilantro
1 tsp of pepper
2 tsp of sea salt (kosher or regular works too)

Filling Ingredients-
1/2 package finely shredded crab meat (or imitation)
1 pckg cream cheese (softened)
1/2 cup sour cream (light)
6 diced green onions
2 tbl spns garlic minced
4 tbl spns lemon juice
(optional: You can add 1 package of softened silk tofu as well to make it slightly healthier)

Dough Instructions
Add the flour to a bowl, then add in the spices first and mix well. Once mixed thoroughly add in the 2 eggs & the oil, only slowly adding in the water. You have to be careful when making dough, adding too much water can turn it into a batter not a dough so you want to add it slowly while mixing the dough. The dough should have a sort of -play dough- consistency, meaning not running but not dry.

Once dough is mixed and formed into a ball, add it to a flat surface COVERED in additional loose flour to keep it from sticking and slowly roll out tell you come to the thickness you like (I like it like at 1/4 centimeter thick). Slowly cut out circles from the dough. Reform ball when all circles are cut and removed and repeat until dough is used up.

Filling Instructions
So while the dough is sitting you should cover it so not to dry it out and move on to the filling. What I like to do is chop/mince up the crab meat until it is fine and in little pieces. Then lightly warm it up in a frying pan (I don't care if it is "OK" to eat out of the package.. WARM IT UP!). While crab is warming up, chop up the green onions and add to a bowl. Then add all the other ingredients. Let the crab cool back down a little bit and then add to the mixture and mix until creamy smooth.

Stuffed Noodles Instructions
Now take half a teaspoon of filling and add to one of the circles, add another circle after brushing water around the edges and pinch sealed. Repeat until all noodles are used. Then oil or grease (heck use a bit of pam if you want) to a cookie sheet add the noodles and bake at 400 degrees until golden brown. OR instead of boiling you could also boil these in a pot of hot water until they float.. I like mine.. baked. You could even fry these up too.

NOTES--
What to do with all the left over filling? Well easy.. Bag it up for tomorrow and eat it on crackers, or in a salad.. Or even better.. Make stuffed tomatoes, bell peppers or even be a bit original and stuff a LARGE white onion with it and bake up for about 20-25 minutes and enjoy.
