Chibi's Meatloaf
(hands free)
Ingredients
2 lbs of any mixture of ground meat (Beef, Turkey or Pork)
2 lbs of any mixture of ground meat (Beef, Turkey or Pork)
2 small cans of tomato paste (NOT sauce)
2 eggs (or 3 egg whites) (I suggest brown eggs for better flavor)
1/2 cup sharp cheddar shredded (or any cheese of choice)
1/2 medium sized red onion, peeled and diced finely
2 tbsp minced garlic
1 tbsp onion powder
1 tsp red pepper flakes
1 tbsp French's yellow mustard (oooh yea)
1 1.2 cups rolled oats (uncooked)
5-6 strips of bacon (I use Turkey Bacon)
Ketchup for glazing
1 gallon sized zip lock bag
Directions
Heat oven to 350, then place all ingredients into the ziplock bag. Make sure to crack the eggs first into a separate bowl and whisk to check for shell bits. Now make sure to remove/compress MOST of the air from the bag and seal closed. Slowly using your hands to knead the bag and blend the ingredients. This is a good way of containing germs AND keeping the mess to a minimum. Make sure you blend and knead for about 2-4 minutes until everything looks evenly mixed. Place mixture into a baking pan. I like actually using pie shaped pans, then coat the top of the mixture with ketchup using a spatula to smear and ice. Place in oven and bake for about 30 minutes.. Then pull out add the raw bacon strips and what I like doing then is placing it back into the oven cooking tell it is done, pull out and add just a SMALL amount of cheese over the bacon placing it back in for about 5 minutes until the cheese is melted. Pull out set on stove to sit and settle for about 3 minutes cut and serve. There you have a hands free, less mess meatloaf.
