Chibi's Curry

Chibi's Curry
Ingredients
2 cans of Yellow Golden Curry
1 can of low sodium chicken broth
1 can of coconut milk (Thai Kitchen is the best)
2 skinless chicken breasts, medium-large size chopped/cubed
1/2 red onion, chopped
1/2 white onion, chopped
1/2 bag frozen carrots, chopped
1/4 cup frozen corn, white corn is the best
1 can tomatoes, diced, drained
2 tablespoons garlic, minced
1 stalk celery, washed and chopped finely
1 bag frozen brown rice (steamable option the best)
Directions
In a large pot add curry base, broth, coconut milk, chopped onions, and garlic. Let it simmer until it starts to bubble. Then add in the cubed chicken pieces, and the vegetables, cover and let cook about 1 hr. When its about 50 minutes into cooking I like to pop in the brown rice in the microwave and let it cook until the bag pops. Seriously really easy just takes a while to cook.
Optional Ingredients-
Half and half the meat choices, half chicken half lean pork, all pork, steak. I like to do chicken and lamb the most. Toss in a couple small baby potatoes to make it heartier. Also if you have the time leeks and peeled diced egg plant are delicious choices.. As well as if your looking for a bit more healthier kick add a cup of Soybeans (shelled) to the curry.
