Chibi's Chilly day Pumpkin Soup

Pumpkin Soup w/ Cinnamon Croutons


Pumpkin Soup Instructions
Soup Ingredients:
1 large can pumpkin puree
1/2 can chicken stock (do not use beef it tastes weird)
1 1/2 cups heavy cream
1 tsp nutmeg
1 tsp cinnamon (ground)
1/2 tblspn vanilla
1/2 tblspn honey
1/2 stick butter (optional if you like yours SUPER creamy)
Whipped cream (when done and optional but OMG so good)

Directions:
Empty pumpkin into a bowl with the nutmeg, cinnamon and vanilla, blend together (I put mine in a blender lol). Cream it all together. Set aside in fridge. Put the chicken broth into a pot and bring it to a rolling boil. Mix in pumpkin mixture and cream with vanilla.. Blend well and let the sauce simmer on low heat for about 30 minutes until thick and creamy.

Cinnamon Croutons Instructions
Crouton ingredients:
1/2 loaf french bread (or ciabatta is amazing) plain.
1/4 cup olive oil
Cinnamon and sugar to taste (I use MORE cinnamon and splenda)

Directions:
Preheat the oven to 350, Cube up the bread into the size you like (I tend to leave mine more like biscotti shaped about 1 inch wide and 3 inches long with about a 1/4 inch thickness. arrange on a non-stick pan and put into the oven.. Let it bake/toast about 20-25 minutes (check it about every five minutes to see if its starting to over crisp). When its to the crispiness desire you like.. tug from oven, brush a light coating of extra virgin olive oil over them and then sprinkle with cinnamon and sugar.. replace back into oven about 5-10 minutes to let the oil absorb into the bread (do not let it burn)


Optional when serving-
You can serve this hot or chilled, or even in a hallowed out pumpkin. (Which I suggest removing the guts of the pumpkin, then baking the gutted pumpkin (whole naturally) for about 30 minutes on about 350 (watch it for burning). This actually makes it look beautiful when you serve a WHOLE pumpkin on the table only to pluck the lid and show off this delicious soup.

Other options is adding a dollop of Whipped cream for sweetness, or sour cream for savory. Also if you fry up some bacon crumbles. Drain the grease and add it makes it delicious too.
