TACO BAKED MESS!

Taco Pie/Lasagna

Ingredients
1lb ground animal (beef, turkey, pork, chicken, wild game)
2cups previously cooked rice (any kind will do, I used Jasmine rice)
1 can refried beans (I used the vegetarian beans to cut on fat)
2cups ricotta cheese
3cups shredded cheese (I use sharp)
2 tomatoes sliced thinly
1 onion sliced thinly
2 packets taco seasoning
18 corn tortillas

Optional- Sour Cream & chives

Instructions
Start grounding the hamburger up in a frying pan, while burger is frying up open the can of beans and get them cooking to where they are smooth and creamy. I normally add about 2 tablespoons of butter to mine only to add to the creaminess. Get the beans cooking on low simmer heat. While meat and beans are cooking, grease a 9x5 cake pan (I used Olive Oil) and line the first layer of six tortillas on the bottom but where they come up over the sides like a pie crust.

Start preheating the oven at 350 degrees then go ahead and start dicing the tomatoes and onions and then set them aside. In a bowl add the ricotta cheese, 1cup shredded cheese and one of the packets of taco seasoning, blend well and set aside. When the hamburger is halfway done add about 1/2 the diced onion to the burger and the rice. Let the burger cook all the way through. Once done drain excessive grease from the burger, replace in pan and add 1 cup of water and the second packet of Taco Seasoning.. Let simmer until thick and all water gone.

Now smear the beans over the first layer of tortillas, add the ricotta cheese mixture over that, then layer the hamburger and then the tomatoes.. Add another layer of six tortillas over that, cover that layer with remaining ricotta cheese, tomatoes and remaining onion. Cover one last time with remaining tortillas. Slide into oven.

Let it bake about 15 minutes until top layer of tortillas start to brown, then smother top layer of tortillas with the last of the shredded cheese and replace in oven. Bake until the cheese is all melted over, normally takes about 10-15 minutes, WATCH the oven. When Cheese is melted pull from oven and let it sit five minutes, cut and serve, with a possible dollop of sour cream and chopped chives on top.
